FAQ

Cooking is a physical and chemical change we impart on food to make it tastier, more nutritious or convenient. Cooking changes the structure of proteins, carbohydrates and other ingredients of the food and makes them more flavorful, tastier and make the nutrition more available to our bodies.

As with most chemical reactions, the way the food cooks depends on its temperature and time. Biological molecules like protiens and carbohydrates are even more sensitive when it comes to temperatures.

Traditional cooking methods like stovetops can not control the temperature of the food directly, but rely on the user to control the power relying on good judgement and experience. This is error prone, inconsistent and makes it hard to learn cooking.

Precision cooking is a way to cook food by controlling the temperature and time instead of power of the heat source. Sous vide is possibly the well known way to do it, but the same principle can be used for a much wider variety of cooking methods like deep frying, pan frying, sauteeing, searing, air roasting, just to name a few.

With precision cooking, the recipes are easier to cook with, consistent across kitchens and climates.

Precision is NOT an induction cooktop. It uses traditional resistive heating, but designed to be a lot more dynamic. We recognize that induction has its advantages. It is responsive, it is efficient, the cooktop remains cool and easier to clean.

But, our decision to go with non-induction based technology was because:

  • Induction is notorious for being not-uniform in heating. The best multi-layer pans still have a 10-50 F variation [Source. In this case, using a Control Freak, arguably a high performance induction cooktop in every aspect]. Something like cast iron can have 80 F non-uniformity. In our view, for a precision cooker, all the accuracy of 1 F is kind of pointless if the uniformity is 10 to 50 times worse. The figurative lipstick on the pig. So we took an approach more favoring the uniformity.
  • Induction restricts your pan choices. While for most purposes this is not a big issues, we think for precision cooking the compatibility with better spreading materials like copper of aluminum pans is of added value. Apart from material, induction also does not work for very small pans because the detectors do not detect it.
  • Induction is noisy. The coils through which the induction currents run, need to be actively cooled. This often mandates a fan of reasonable size. Not much of an issue during regular cooking, but if you want to use your precision cooking for a 72 hour fermentation cycle or for a fondue on the dining table, this gets very annoying.
  • Induction makes the electronic design a lot more complex. The power electronics get more complex which increases the cost of the whole thing. We do not think it would be feasible to do justice at this price point for an electronic design that would be sufficiently robust, reliable and durable.

Precius Station uses a resistive heater similar to electric stoves. The heater is compatiable with all kinds of metal cookware including copper, aluminum in addition to iron and steel.

Precius Station works using a sophisticated control technology typically used in industrial processes and robotics. The temperature sensor measures the actual temperature of the pan (or the liquid) and adjusts the heater power continuously (several times a second) to make sure the target temperature is reached as soon as possible without overshooting. It also works similarly to maintain the temperature for a set duration.

The next big step

The next big step for the project is to start manufacturing of the Precius Station. Creating and selling the hardware is the only way for us to sustain as a business, earn our livelihoods and continue open source development of this project. We expect following costs before/during the manufacturing stage.
  • Tooling cost: estimated 30,000 USD These are the tools needed to form the metal body, custom heater, and injection molded plastic parts
  • Certification cost : estimated at 20,000 USD for relevant certifications in EU, USA and UK
  • First order capital : estimated at 50,000 USD to meet the minimum order quantity requirements of the manufacturer

This is before counting all the design and development effort. While we will do our best to bring these costs down, they will never be low enough to fit within the risk capacity of a small company like ours. So, we believe the next big step for us is to crowdfund Precius Station and generate revenue to cover a significant portion of these costs. We do count on your support to make that happen.
